Carrot Cake Muffins

2 eggs
1/2 cup plus 2 tbl. oil
1/2 cup sugar
1-1/2 cups grated carrot
1/2 cup raisins
1-1/2 cups flour
2-1/4 tsp. baking powder
1/4 tsp. salt
1-1/2 tsp. cinnamon
1/2 tsp. nutmeg
Preheat oven to 400 degrees. Grease muffin tin, or line with paper liners.
In a large bowl whisk the eggs, oil, and sugar until smooth. Stir in the carrots and raisins. In another bowl, stir together remaining ingredients. Add flour mixture to the carrot mixture and stir well to combine. Bake for about 20- 25 minutes.
